Nancy's Blueberry Muffins

Muffin Ingredients:

¼ cup butter
3 Tbsp. margarine

2/3 cup sugar 
1 egg, beaten

2 ¼ cups all purpose flour
dash nutmeg

dash salt
1 tsp. cinnamon

4 tsp. baking powder

1 cup milk 
1 tsp. lemon juice

1 ¼ cup blueberries, separated


Topping Ingredients:

1 Tbsp. sugar

1 tsp. cinnamon



  1. Preheat oven to 425 degrees.

  2. Grease muffin tins or line with paper baking cups.

  3. In small bowl, cream together butter, margarine and sugar. Add beaten egg and mix lightly.

  4. In medium bowl, mix flour, salt, cinnamon, nutmeg, and baking powder. 
    Add to creamy mixture along with milk and lemon juice. Mix just enough to blend then fold in 1 cup of blueberries.

  5. Pour into muffin tins adding remaining blueberries to top of muffins and then sprinkling the topping mix over them.

  6. Bake 23-25 minutes until golden brown; cool.


Makes 12 medium-sized muffins.
